Lemon Tartlets

Do you recognize this thought: I hope the taxi passes a roundabout, so I can buy some lemons. As sure as there is an “AH to go” in every Dutch train station, there is a man with a basket of lemons on his head at every roundabout in Senegal. At least in the lemon season… These vitamin C bombs are ripening on the trees now! That’s a good thing during the flu epidemic (yes, people in Africa have flu as well…) You add some to your tea or water, but you can also throw and play with it, or you create tartlets out of them…

Take a lemon. Press it and raps the skin.

Put lemon skin together with 1 cup (= 8 oz. or 250g) flour and 0,5 cup (= 4 oz. or 125g) butter, 1 egg yolk, 2 teaspoons sugar and 2 tablespoons water in the dough. Flatten with pastry roller and punch out circles of 7 cm. Put these in a muffin tin (as a cup) and bake 10 minutes at 180 degrees.

The stuffing is made of lemon juice and 0.5 cup (= 125 ml) thick homemade yogurt, 0.5 cup (125 ml) condensed milk, 0.5 cup (125g) sugar, and 2 egg yolks. Fill the cups, bake for 5 minutes more and enjoy some healthy pastry!
